Valentine's Day

Happy Valentine's Day!
~
I have to admit, Eric and I don't really get into Valentine's a whole lot.
We're now in the "we celebrate it for our kids" mode more than anything.teacher gifts, Claire's gift, red velvet pancake mix for dinner,
plus our Valentine's tablecloth...check, check, check!
Painting feet to stamp into heart shapes.
the four year old was ticklish as ever, the baby just sat oblivious to the fact that his feet were gooey and wet.This girl was majorly excited for her Valentine's party at school.
Valentine's is big stuff when you're a four year old girl, you know.I had 25 minutes between when I dropped Claire off at school and when I had to be back to her school to help with her class' Valentine's party.
Enter : my Valentine's treat!There's nothing cuter (or more exhausting) then spending an afternoon in a preschool classroom. God bless the preschool teachers for their energy and patience!
Look, even I got to decorate a cookie at preschool!meanwhile, this guy spent the afternoon at Papa & Grandma's house.and finally, breakfast for dinner. Red velvet pancakes, not too bad!

One Year

This month marks the one year anniversary of my products being available at Rebel.reclaimed!
What a fun year it has been!
I feel so fortunate to be a part of such an incredible shop!
And I'm not going to lie, I still get giddy when I drive by and see one of my products in the window, or when I walk in and see an entire display of my products!
Thanks so much Dann & Chip for letting me be a part of your store! You two pour your hearts into the place, and it's a huge honor for me to have a small part in it!

Insta-Friday

Happy Friday, everyone!
We had a pretty low-key week over here...Super Bowl Sunday.
I didn't pay a ton of attention to the game...or the commercials for that matter. They just didn't impress me this year. This guy though, definitely cuter than the quarterback!
Eric made us guacamole to eat during the game, yum!Claire has been asking for smoothies. Kind of random, but totally okay by me! We just dump all sorts of fruits and yogurt into the blender along with some ice and they always turn out so good!

I've owned this book for probably two years now, but finally cracked it this week. I've only made a dent in it, but it's really causing me to be more aware of how I speak to Claire and what things I need to tweak or changesadhappy

Baked Oatmeal

I'm not sure about your family, but I would say ours falls into the category of we eat "good" but we could eat "better". We eat good in the sense that if you open our pantry doors, you wont find any cookies, chips, box dinners, or things of that nature. But we could eat "better" in that we could stand to eat more fresh foods including fruits and vegetables during the winter months, and foods made from scratch.

I recently committed that I was going to find 10 new, healthy recipes that could be our "standard" recipes that everyone in the family likes (that includes the picky 4 year old, oy!)
~
I found this recipe for Baked Oatmeal with Blueberries and Bananas last week on Skinnytaste and it was an immediate hit with my family. It helps that Eric's love language happens to include blueberries, and Claire could live off of oatmeal alone. And me? I love any fruit-based dessert, and you could seriously convince someone that this is a dessert!pre-oven

Here's the recipe:

Ingredients:
2 medium ripe bananas, (the riper the better) sliced into 1/2" pieces
1 1/2 cup blueberries
1/4 cup honey (or agave)
1 cup uncooked quick oats
1/4 cup chopped walnuts or pecans
1/2 tsp baking powder
3/4 tsp cinnamon
pinch of salt
1 cup fat free milk (or any milk you desire)
1 egg
1 tsp vanilla extract

Directions:
Preheat the oven to 375° F. Lightly spray a 8 x 8" or 9 x 9" ceramic baking dish with cooking spray; set aside. Arrange the banana slices in a single layer on the bottom of the ceramic dish. Sprinkle half of the blueberries over the bananas, 1/4 tsp of the cinnamon, 1 tbsp of the honey and cover with foil. Bake 15 minutes, until the bananas get soft.

Meanwhile, in a medium bowl, combine the oats, half of nuts, baking powder, remaining cinnamon, and salt; stir together. In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.

Remove the bananas from the oven, then pour the oat mixture over the bananas and blueberries.

Pour the milk mixture over the oats, making sure to distribute the mixture as evenly as possible over the oats. Sprinkle the remaining blueberries and walnuts over the the top.

Bake
the oatmeal for about 30 minutes, or until the top is golden brown and the oatmeal has set. Serve warm from the oven.

Hi all!
Phew, another week has flown by!
Here's a bit about what ours looked like...Friday brought Daddy-Daughter Date Night!
Red Robin for dinner and Barnes & Noble to pick out a new book!Topsy turvy cupcakes left on our front porch by our neighbors.
No, this is not the first time this has happened.
Yes, we do have the best neighbors EVER!Watch out!
There's just something about this time of year,
it always puts me in a mood to get things done around the house.One project included on my list was installing cup hooks for my jewelry inside of our bathroom cabinet. No more digging around for a certain necklace or bracelet, they're all right there in plain sight now!Also on my to do list, fixing some of the dings in our black furniture.
A black sharpie works wonders!Tuesday was 55 degrees and sunny.
As far as I'm concerned, that definitely necessitates a frozen beverage.
3 months old.
*sigh*Do yourself a favor, add this ice cream to your Super Bowl watching junk food fest.

So that's our week! And for those of you who read on a regular basis...I had a Mac date with my Mac-savvy neighbor this week, and I'm happy to report that the MacBook was spared becoming a really expensive frisbee. I'm still not in love, but we're at least friends now.
